  • 8 oz (225g) pasta (such as fusilli or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, diced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to the package instructions. Once cooked, drain and let it cool to room temperature.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, fresh mozzarella, and chopped basil.
  3. Whisk together the extra virgin olive oil and balsamic vinegar in a small bowl. Pour the dressing over the pasta salad and toss to combine.
