Method
- Cook the pasta according to the package instructions. Once cooked, drain and let it cool to room temperature.
- In a large bowl, combine the cooked pasta, cherry tomatoes, fresh mozzarella, and chopped basil.
- Whisk together the extra virgin olive oil and balsamic vinegar in a small bowl. Pour the dressing over the pasta salad and toss to combine.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 30 minutes before serving to allow the flavours to meld together.
