Zucchini Mint Salad

 

Ingredients

  • 3 medium zucchini
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup chopped fresh mint
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons lemon juice

Instructions

  • Wash the zucchini and trim off the ends. Use a mandoline or a sharp knife to slice the zucchini into thin rounds.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • In a large bowl, combine the sliced zucchini and chopped mint. Pour the dressing over the top and toss to coat evenly.
  • Serve
