Glass noodle salad is a colourful and tasty Asian dish that uses mung bean starch to make thin, clear noodles. These noodles mix with fresh veggies, meat, and spicy dressings. It’s a popular light meal or side dish in Asian cultures, offering a mix of sweet, savoury, and tangy flavours.

Ingredients:

For the noodles:

  • 1 package of glass noodles
  • 1 tablespoon sesame oil

For the vegetables:

  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped peanuts
  • Fresh cilantro, for garnish

For the dressing:

  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or sugar
  • 1/2 teaspoon red pepper flakes (optional)

Instructions:

  1. Prepare the noodles:

    • Soak glass noodles in warm water for 5-10 minutes or according to package directions.
    • Drain and rinse with cold water.
    • Toss with sesame oil to prevent sticking.
  2. Prepare the vegetables:

    • Julienne the carrot and cucumber.
    • Thinly slice the red onion.
    • Chop the peanuts.
  3. Make the dressing:

    • In a small bowl, whisk together lime juice, soy sauce, fish sauce, rice vinegar, honey or sugar, and red pepper flakes (if using).
  4. Assemble the salad:

    • In a large bowl, combine the cooked glass noodles, carrots, cucumber, red onion, and peanuts.
    • Pour the dressing over the salad and toss to coat evenly.
    • Garnish with fresh cilantro.
