- 1 package of glass noodles
- 1 tbsp sesame oil
- 1 carrot, julienned
- 1 cucumber, julienned
- ½ red onion, thinly sliced
- ¼ cup chopped peanuts
- Fresh cilantro, for garnish
For the dressing:
- 2 tbsp lime juice
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp rice vinegar
- 1 tsp honey or sugar
- ½ tsp red pepper flakes (optional)
Prepare the noodles:
Soak glass noodles in warm water for 5-10 minutes or according to package directions.
Drain and rinse with cold water.
Toss with sesame oil to prevent sticking.
Make the dressing:
In a small bowl, whisk together lime juice, soy sauce, fish sauce, rice vinegar, honey or sugar, and red pepper flakes (if using).
Assemble the salad:
In a large bowl, combine the cooked glass noodles, carrots, cucumber, red onion, and peanuts.
Pour the dressing over the salad and toss to coat evenly.
Garnish with fresh cilantro.
