Prepare the noodles:
- Soak glass noodles in warm water for 5-10 minutes or according to package directions.
- Drain and rinse with cold water.
- Toss with sesame oil to prevent sticking.
Prepare the vegetables:
- Julienne the carrot and cucumber.
- Thinly slice the red onion.
- Chop the peanuts.
Make the dressing:
- In a small bowl, whisk together lime juice, soy sauce, fish sauce, rice vinegar, honey or sugar, and red pepper flakes (if using).
Assemble the salad:
- In a large bowl, combine the cooked glass noodles, carrots, cucumber, red onion, and peanuts.
- Pour the dressing over the salad and toss to coat evenly.
- Garnish with fresh cilantro.
