Glass Noodle Salad

Ingredients
  

  • 1 package of glass noodles
  • 1 tbsp sesame oil
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • ½ red onion, thinly sliced
  • ¼ cup chopped peanuts
  • Fresh cilantro, for garnish
For the dressing:
  • 2 tbsp lime juice
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp rice vinegar
  • 1 tsp honey or sugar
  • ½ tsp red pepper flakes (optional)

Method
 

Prepare the noodles:
  1. Soak glass noodles in warm water for 5-10 minutes or according to package directions.
  2. Drain and rinse with cold water.
  3. Toss with sesame oil to prevent sticking.
Prepare the vegetables:
  1. Julienne the carrot and cucumber.
  2. Thinly slice the red onion.
  3. Chop the peanuts.
Make the dressing:
  1. In a small bowl, whisk together lime juice, soy sauce, fish sauce, rice vinegar, honey or sugar, and red pepper flakes (if using).
Assemble the salad:
  1. In a large bowl, combine the cooked glass noodles, carrots, cucumber, red onion, and peanuts.
  2. Pour the dressing over the salad and toss to coat evenly.
  3. Garnish with fresh cilantro.
