- 8 oz (225g) pasta (such as fusilli or penne)
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella, diced
- ¼ cup fresh basil, chopped
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Cook the pasta according to the package instructions. Once cooked, drain and let it cool to room temperature.
In a large bowl, combine the cooked pasta, cherry tomatoes, fresh mozzarella, and chopped basil.
Whisk together the extra virgin olive oil and balsamic vinegar in a small bowl. Pour the dressing over the pasta salad and toss to combine.
Season with salt and pepper to taste.
Cover and refrigerate for at least 30 minutes before serving to allow the flavours to meld together.
