SIMPLE CAPRESE PASTA SALAD

Ingredients
  

  • 8 oz (225g) pasta (such as fusilli or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup  fresh mozzarella, diced
  • ¼ cup  fresh basil, chopped
  • 2 tbsp  extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions
 

  • Cook the pasta according to the package instructions. Once cooked, drain and let it cool to room temperature.
  • In a large bowl, combine the cooked pasta, cherry tomatoes, fresh mozzarella, and chopped basil.
  • Whisk together the extra virgin olive oil and balsamic vinegar in a small bowl. Pour the dressing over the pasta salad and toss to combine.
  • Season with salt and pepper to taste.
  • Cover and refrigerate for at least 30 minutes before serving to allow the flavours to meld together.
